my favorite thing about today #11


My favorite thing(s) about today were:
*Meeting my dad for lunch. We don’t do it often enough and we had a lot of fun.
*Having my mom come over (with Starbucks passion tea in hand…mmmmmm….) and baking pumpkin chocolate chip muffins together.
My parents are the greatest!

This recipe is the one that our house cook at Charis (the Christian girl’s house I lived in during college) used to make. So good. Here it is if you feel like baking some pumpkin chocolate chip muffins.

Pumpkin Chocolate Muffins

1 2/3 C flour

1 C sugar

1 Tablespoon pumpkin pie spice

1 Teaspoon baking powder

¼ Teaspoon baking soda

¼ Teaspoon salt

2 large eggs

1 C plain pumpkin

½ C butter (melted)

1 C (6 oz) chocolate chips

Heat oven to 350°

Grease muffin pan. Thoroughly mix flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt.

Break eggs into a different bowl with pumpkin and butter. Stir until blended. Stir in the chocolate chips.

Pour into dry mix and fold in until dry ingredients are moist.

Bake 20-25 minutes.
