mini chocolate desserts.

This weekend our friends Becca & Chris 
came over for dinner.

They brought their adorable little boy Bennett and he and Marley had a little play date.  It was super cute.  Here’s a picture of the two of them sharing their toys. Marley saw Bennett playing with his toys, so she went over to her toy basket and brought over a toy of her own.  Bennett wants a puppy and Marley wants a baby, so it was the perfect set-up :).



We had homemade pizza for dinner and 
delicious (and super easy!) little mini marshmallow lava cakes
 for dessert, so I thought I’d share the recipe with you.

Mini Molten Marshmallow Chocolate Cakes:

Yield: MAKES: 6 servings

Ingredients

  • 1 1/3  cups  semisweet chocolate chips
  • 1/4  cup  (1/8 lb.) butter
  • 1/3  cup  granulated sugar
  • 2  large eggs
  • 1/2  teaspoon  vanilla
  • 1  cup  all-purpose flour
  • 6  large marshmallows
  • Powdered sugar (optional)

Preparation

1. In a 3- to 4-quart pan over very low heat, stir chocolate chips and butter until melted and smooth. Remove from heat and whisk in granulated sugar, eggs, and vanilla until well blended. Stir in flour.
2. Fill six buttered, floured ramekins (1/2-cup capacity; see notes) about halfway. Press a marshmallow into the center of the batter in each ramekin. Spoon remaining batter equally over marshmallows, completely covering.
3. Bake in the center of a 350° regular or 325° convection oven until tops are puffed up and crackly, 12 to 15 minutes. Let cool about 10 minutes, then run a knife along inside of ramekins and invert to release cakes. Place right side up on plates. Sprinkle tops with powdered sugar, if desired. Serve warm.

  18. Aww Bennett and Marley are too cute. I love seeing my dogs interact appropriately with babies. It’s good to know that once we have kids our dogs will do just fine with them!

  20. i made cakes very similar to these once (without the marshmallows) and they were absolutely divine!! actually i have all of the ingredients necessary to make them.. i’m thinking they should be part of a date night this weekend 😀
