finally a recipe. actually two.

I haven’t posted a recipe in awhile.
Although I have received feedback that people like them.

The reason for the lack of recipes is that
 I’ve been a lazy homemaker these days.

Mostly because I’m not really a homemaker.  Mostly because I work 40 hours a week and don’t feel like cooking once I get home (I still cook, but nothing exciting).  I long for the life of a real homemaker.  I’ve always wanted to be a wife and a mother and as archaic as it may sound I love the idea of wearing an apron and baking cookies and all that jazz.  

Well, today I still wasn’t feeling great, so I took a day off from my internship, and since it’s my day off from work, I spent a little time cooking.  Crock Pot Carnitas Tacos for dinner and Toasted Coconut Chocolate Chunk Cookies with vanilla bean ice cream for dessert.  So…I thought I’d share the recipes to make up for lost time :).


Oh…and FYI…I didn’t take any photos, because my phone’s camera is broken and I’m terribly sad about it.  I guess you’ll have to live with my internet photo finds.  *Sigh*…. OK…. moving on….

Carnitas Tacos
Yield: a butt load of tacos – probably enough for about 8 people to have 2-3 tacos 

Ingredients

  • MEAT:
  • pork butt (or you can buy pre-cut “pork carnitas meat”)
  • 1 orange
  • 1/2  can chicken broth
  • cinnamon
  • cumin
  • oregano
  • garlic
  • chipotle powder
  • red chili flakes



Preparation

1. Place pork in the crockpot and pour the half can of chicken broth in.  Cut the orange in half and squeeze all of the juice into the pot.
2. Add all of the spices to taste.  Be careful with the cumin and cinnamon – a little goes a long way.  I probably used 1/4 teaspoon.
3. Turn the crock pot on low for 10-12 hours.
4. Shred pork by pulling it apart with two forks, then place pork onto a cookie sheet and put it into the oven at 400 degrees. Cook until it gets slightly crispy (about 15 minutes).

5. Heat up tortillas and chop up cilantro and onion.  Fill your taco with all these fixings.  Scarf!
Toasted Coconut Chocolate Chunk Cookies
Yield: 25 servings (serving size: 1 cookie)

Ingredients

  • 1  cup  flaked sweetened coconut
  • 4.5  ounces  all-purpose flour (about 1 cup) – I used 1/2 cup whole wheat flour and 1/2 cup all-purpose flour
  • 1/2  teaspoon  baking powder
  • 1/4  teaspoon  baking soda
  • 1/8  teaspoon  salt
  • 3/4  cup  packed brown sugar
  • 1/4  cup  unsalted butter, softened
  • 1  teaspoon  vanilla extract
  • 1  large egg
  • 2  ounces  dark chocolate (70% cacao), chopped
  • Cooking spray

Preparation

1. Preheat oven to 350°.
2. Arrange coconut in a single layer in a small baking pan. Bake at 350° for 7 minutes or until lightly toasted, stirring once. Set aside to cool.
3. Weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking powder, baking soda, and salt in a medium bowl; stir with a whisk until blended. Place sugar and butter in a large bowl; beat with a mixer at medium speed until well blended. Beat in vanilla and egg. Add flour mixture, beating at low speed just until combined. Stir in toasted coconut and chocolate.
4. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 10 minutes or until bottoms of cookies just begin to brown. Remove from pan, and cool completely on wire racks.

This cookie recipe is definitely my new favorite and carnitas tacos are quickly becoming a household staple for us.  Both recipes are so easy and delicious!

  7. Carnitas tacos=my fave! I am totally adding these to my menu for next week! I love cookie recipes from cooking light…they make me feel good about eating cookies…actually I always feel good about eating cookies but I feel like I can have more than one a day if they are from cooking light!

  8. Lauren–I know exactly how you feel. I am frustrated with the fact that I have school and work getting in the way of preparing meals and cleaning my house for my husband and I. I have depended on him so much with the housework and cleaning our itty bitty apartment.

    I love using a working-girl’s b.f.: the slow-cooker. Right now anyway. I try to find meals that Chad and I will both like and then put them in right before I go to school. It’s Genius!

    The tacos you made look delish–we’re big Mexican eaters in my house so I’m always looking for great dishes.

  13. mmmm. those tacos look SOO good. i didn’t realize how hungry i am right now until i saw that picture. gah. also, please don’t think that i love you less when you get your christmas card and you see an address line scribbled out under your name. i accidentally copied and pasted my brother’s address under your name on the list and didn’t realize i was writing that address for the second time until i was halfway done writing it. man, it is so hard to be me sometimes. but i love you a lot. and i do, for the record, know what city you actually live in. so there.

  15. I’m a lazy homemaker too! It’s sad, but it’s true. I try to make dinner as much as I can, but sometimes life is just too busy and you’re hardly ever home for dinner. I need to get a new crock pot, they make dinners way easier.
