sometimes i kind of hate cooking.

Cooking and I have a love/hate relationship.

Sometimes I love it.
(This generally only lasts for a few weeks at a time.)

I’ll rummage through all of my cook books and magazines for new and exciting recipes and attempt to regale Craig with my culinary talents.

Sometimes I hate it.
(This is generally most of the time.)

I’ll go for weeks without eating any “real” food.  The past few weeks has been one of those times.  I’ve pretty much eaten cereal or something random + toast.  Sometimes toast + a couple cheese slices or toast + yogurt or PB&J on toast.  I get pretty creative obviously.  I don’t know what it is.  Sometimes food just doesn’t excite me….or at least cooking it myself doesn’t excite me.

BUT….

I finally cooked tonight!

I think Craig thought it was a miracle or something.  Until he realized it was vegetarian.  My man is definitely a carnivore through and through.  But despite the fact that there was no meat, he actually liked this dish (despite his subtle comment about how it would be great with chicken).  I thought it was delicious!  I highly recommend this….and it’s from Cooking Light, so you can feel kind of virtuous about it :).

  • YIELD: 4 servings (serving size: 1 cup pasta mixture and 1 teaspoon basil)
  • COURSE: Main Dishes
Ingredients
  • 8 ounces uncooked linguine
  • 1 cup 1% low-fat milk
  • 2 tablespoons chopped fresh basil, divided
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon all-purpose flour
  • 1/2 cup (2 ounces) shaved fresh Parmigiano-Reggiano cheese, divided
  • 1 1/2 tablespoons mascarpone cheese


Preparation
  • 1. Cook pasta according to package directions, omitting salt and fat. Drain; keep warm.
  • 2. While pasta cooks, combine milk, 2 teaspoons basil, salt, and pepper in a bowl; stir milk mixture with a whisk.
  • 3. Heat a small saucepan over medium heat. Add oil to pan; swirl to coat. Add flour to pan, and cook for 2 minutes, stirring constantly. Add milk mixture; cook for 3 minutes or until slightly thickened, stirring frequently. Remove from heat, and add 1 1/2 ounces Parmigiano-Reggiano and mascarpone cheese to milk mixture. Add cheese mixture to pasta; toss to combine. Sprinkle with remaining 4 teaspoons basil and remaining 1/2 ounce Parmigiano-Reggiano.

  5. I hear you on this. I cook for a spell and then I don’t. I love Super Natural cooking. One of my favorite recipes is the oatmeal bake. It’s super simple. I am also a fan of sweet potato enchiladas. Super easy and delicious. I think I got that one online somewhere.

  7. Yummy! That looks great, friend! As far as recipe ideas go, I’ve been more on the vegetarian track lately so I don’t have anything that would suit both you AND Craig. But you can’t go wrong with feta-stuffed chicken or steak kabobs on the grill!

  18. Right now I hate cooking. A week at an all-inclusive resort can do that to you. Plus, now that it’s summer, I don’t feel like eating a lot.

    I am lucky though that my mom is visiting so she has been cooking for us for the past two weeks. When she leaves, I am going to have to put on my apron and thinking cap and figure out what we can eat for the summer months.

  20. I can so relate to the love/hate! I love the idea of it. I love scouring recipe books, and I love all the pretty pictures of food in them… but mostly, cooking is just a chore!
    However… I have been getting creative with it lately, and I’m hoping this mojo doesn’t wear off any time soon!

  21. I get this familiar love/hate thing for cooking. The fact that I have to feed my husband is the only thing that makes me want to get up and cook.
    Sometimes I just want two minutes recipes but hubby doesn’t like what I like. 🙁
    Anyways I like making exotic Indian food though.
