i’m betty freaking crocker.

I’m totally on a baking kick these days.


It’s my version of nesting.  I actually kind of (ok…really) hate baking.  It never turns out the way I want and it takes way too long.


My latest baking project was making 
Apple Cinnamon Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 2 apples – peeled, cored and chopped
  •  
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/2 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  2. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  3. In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.


The recipe is definitely NOT healthy by any means, but it sure is delicious.  Maybe just don’t go read the nutrition facts.  It’s probably for the best.  If anyone has a healthy version of apple cinnamon muffins, please send it my way before I gain 8,000 lbs.  Thanks!

  1. I would love these! I’m always shocked by how many calories are in muffins, but I usually can’t help myself.

  2. Maybe try replacing some of the fat with un sweetened apple sauce and reducing the sugar. You should be able to reduce the sugar by a 3rd without harming the recipe and apple sauce is a common way to replace fats in baking, plus it will make your muffins more apple-y 🙂

  9. i 100% do not believe in low fat baking recipes! I say make em fatty and delicious and then run an extra mile or two! or in your case let the baby enjoy the sugar:)

  11. I just made these last weekend and are DELISH…you could substituted light apple juice and apple sauce for white suger and for the oil 🙂 the wheat flour isn’t heavy either (I used Bob Red Mill organic wheat flour)

  14. I’ve been thinking about baking a bit more since I’ve been home on maternity leave. I was going to make brownies this week, but when I went to attempt it, I realized I was out of vegetable oil. I bet I will no longer be interested in making them by the time I get to the store.
