apparently i’m a carnivore now.

I’ve always been an omnivore.
(…mostly a carb-i-vore if I’m really honest)
Although….
I’m not a huge meat lover.
I like it, but I don’t really like to cook it.  Not because I have any moral qualms about it or anything, it’s just that after I cook it, it doesn’t really seem all that appetizing anymore.  Also, I’m terrible at cooking it.  I’m super paranoid about not cooking it fully, so I always end up overcooking it.  Especially steak.  I’ve ruined many a beautiful steak this way.
BUT….
At my last two appointments with my midwife, I’ve been scolded for the lack of protein in my diet (apparently pee doesn’t lie).  Time to eat more meat.  My midwife actually said I should be trying to incorporate more red meat into my diet, so I’m trying to figure out ways to do that.

Lucky for me The Pioneer Woman is most definitely a carnivore and has a delicious recipe for Sloppy Joe’s that I’ve been loving lately (and bonus – it’s pretty hard to screw up!).

If you have any other easy, fail-proof meat recipes to send to me I’m all ears!

  2. I really like tacos! I’m not a huge beef person, but ground beef is really easy to cook and able to tell when its done.

  3. Oh, Pioneer Woman is the BEST! Perhaps you could use a crockpot and find success with it. It is the greatest as far as I’m concerned and meat is always moist and properly cooked. All the best in getting more protein for you and baby.

  6. Tacos! My husband has a trick: brown the ground beef (fool proof. cook it until it isn’t pink anymore. literally that’s it.), drain the beef, and put a can of refried beans in with newly-browned-and-drained beef. Mix them together and make tacos with it.

    It’s delish. For extra protein, put lots of cheese on it too.

  7. My husband and I don’t have a lot of money, and one “recipe” we found that is delicious is ground meat mixed with lima beans (created when we didn’t have much else in the fridge). Brown the meat (you can mix any sort of spices or seasoning you want with it), and boil the lima beans until soft. Then mix together. Honestly…it’s really good and we fix it quite often now “on purpose”.

  9. OK, when I was pregnant I was SO into meat, and I started to crave beef stroganoff! I know, like insane. But this recipe from Tyler Florence will KNOCK YOUR SOCKS OFF. It calls for cognac which is spendy, but I used brandy (8 month preggo lady in a utah state liquor store…) and it’s the BEST! Also try his Dad’s Meatloaf recipe. It has pork, beef and bacon on TOP. Yeah. You’re welcome!

  11. Beef roast + crock pot + (2) cans of French Onion Soup
    Low 7-8 hours

    The meat falls apart and is so tender. Put on a bun and use the jus for dipping! We like to add provolone to ours!

    SO easy and it’s a no-brainer that it’s cooked all the way.

  13. I’m one of those obnoxious people who do have moral qualms about eating meat, but I still manage to get plenty of protein. Don’t get me wrong, I indulge in a tuna sandwich or some chicken strips every once in awhile, but the majority of the time I rely on nuts & beans to get my protein. And trust me, I get more than enough. Try a good trail mix with lots of nuts as a snack, or some vegetarian burritos with beans. Just as yummy, and way better for you! 🙂

  14. Chili!

    Winter is such a good time for chili. I never liked it, and I’ve never liked beans, but last new years I was at my (then) fiance’s house for their party and chili cookoff. I tried a bite, then ate five bowls!

    Here’s what I do:

    Brown a pound of ground beef in a pot with one chopped onion. Throw in a chopped bell pepper, too, if there’s one handy. Add a can of original rotel tomatoes, one can of plain diced tomatoes, one can of plain tomato sauce, and two cans of beans of your choice. (I like black!) Add about a tablespoon of chili powder, a teaspoon or two of cumin, a teaspoon each of salt and pepper, a dash of cayenne, and a chopped chili or jalepeno if you like things spicy. Cover, simmer for a few hours, and serve with shredded cheddar, sour cream, and fritos or tortilla chips. Yum!

  15. Everything the pioneer woman makes is amazing! Seriously, I haven’t been disappointed by a single recipe of hers!

    On to meat…. Steak is easy… I promise!
    Take your steak, salt it and then re-wrap it and leave it on the counter. Let it sit out for 20 minutes. Then throw it in a medium/hot cast iron skillet. Let it sear and flip it… Flip it one more time to make pretty marks and then take it out.

    A one pound new york steak should be in the pan on medium-high heat for no more than 4 minutes. It will be perfect. I swear! =)

  16. The great thing about red meat is it doesn’t have to be cooked until well done. If we’ve talking steak, I personally would go with a med-rare but only if I have gotten good quality grass fed & finished meat fed no medications, hormones, or antibiotics. (my favorite place to get this meat is Pine Mountain Buffalo Ranch @ either PSU or Hillsdale Farmer’s Markets) Grass fed & finished is super important especially since you are a carbivore, like me, because the meat will have a higher Omega 3 count instead of Omega 6s which come from a grain diet. Oh and the other great reason I love them is that when you buy ground meat from them it’s ground from only one piece of meat-meaning you’re eating from only one animal verses 100s+ like commercially processed ground meats.

    Anyways-on to my favorite easy recipes!

    Meatloaf (which I used to hate until I made it this way)
    1.5 lb ground buffalo/or beef
    2 slices Daves killer spelt bread
    1 diced onion
    1 egg
    1.5 teaspoons salt
    1 teaspoon fresh pepper
    6 oz tomato paste
    3 Tablespoons white vinegar
    3 Tablespoons brown sugar
    2 Tablespoons of fav mustard (I like Spicy Brown)
    2 Tablespoons Worcestershire sauce
    -Preheat oven to 350 degrees F. Mix all together in bowl, pour into your loaf pan & bake for 45 mins with foil on top & 15 minutes without foil.

    Potato-Topped Beef Pie
    1 lb ground beef
    1 onion, chopped
    1 garlic clove, crushed
    1 Tablespoon flour (whole wheat or AP)
    1 cup beef stock
    2 Tablespoons tomato paste
    2 celery stalks, chopped
    2 carrots, chopped
    3 Tablespoons fresh parsley (you can omit this)
    1 Tablespoon Worcestershire sauce
    1 lb potatoes, diced
    4 Tablespoons butter
    2 Tablespoons milk or cream
    Salt & Pepper

    Brown ground beef in pan for 3-4 mins. Add onion and garlic, stirring for 5-ish mins. Sprinkle flour over top and stir in, add tomato paste and beef stock and stir in. Add celery, carrots, parsley, and Worcestershire. Bring to a boil, then reduce heat & simmer for 20-25 mins. Spoon mixture into large pyrex/pie dish. Preheat oven to 375 degrees F.
    Cook potatoes in boiling water until soft, drain & mash, add butter, milk/cream, and salt & pepper to taste then spread mashed potatoes over beef mixture in dish and bake in preheated oven for 45 mins or until cooked through. (you can also top potatoes with cheese if you like.
