keeping it real: baking edition

I like to keep things real around here.
My life isn’t perfect and I hope you all recognize that.
Just because I choose to show you all the best photos and stories from my daily life does not mean that it all goes smoothly all the time. Often it doesn’t. So, I think I’m going to be doing a recurring post called “keeping it real” (which in the interest of keeping it real, I might not actually stick with, but it’s worth a try!) where I’ll post about real-life stuff that happens. Not just the delicious meals and pretty hair and smiling baby pictures…because everyone likes seeing a bit of reality from time to time, right?
Today I’m keeping it real with baking.
If you’ve been reading this blog for any amount of time, you may recall that I’m not a baker. I don’t really like it, because it’s so easy to screw it up and it’s not fixable like cooking is. Plus, I really don’t need anymore sweets in my life despite my undying love for them.
That said, the other day while my friend Jamie was over, it was rainy and feeling very fall’ish so we decided to bake.  Here’s what my kitchen looked like afterward.
We made these apple cinnamon streusel muffins by combining this muffin recipe with the crumble topping from this recipe. The resulting muffins looked pretty good, but the muffin part was a little underbaked and they were too sweet. That’s what I get for trying to get creative. I’m sure both of those recipes were great on their own – and I KNOW that the blueberry muffins were seriously the best I’ve ever had in my life, but mixing the two? A no go.
Does that mean I didn’t still eat them?
Nope.  I totally did, because whoever met a muffin they didn’t like? …Besides bran muffins…who likes those? Answer: not really anyone, except people trying to fool themselves since they’re healthier. Pretty much everyone on the planet would rather have a sweet, streusel topped muffin instead. But, maybe I’m just projecting.
It looked pretty though, no?
So, there you have it.
A bit of reality from me to you.

Now…does anyone have any really good apple cinnamon muffin recipes?

  3. At least they looked good! And I’m glad you ate them anyway, because that is something I would totally do as well. I have a pear muffin recipe that my friends and I love, and I’m thinking it wouldn’t be much of a stretch to just throw in apples instead of pears and maybe more cinnamon…?   4. They look pretty indeed, I’m sorry to hear they didn’t turn out so well though, but glad you enjoyed them none the less!
    I’ve never understood bran muffins…
    I have an Apple streusel muffin recipe you could try. I’ve never baked them myself but for all the other things I have baked using recipes from the same book, they’ve turned out well.

It’s from the Hummingbird Bakery cake days book, but I found it in a lovely blog here http://thebakeescape.wordpress.com/2011/09/01/spiced-apple-and-walnut-cupcakes/ I have also made this as a big cake for my Dad’s birthday and it worked equally as well like that that. Enjoy!
