One of my all-time favorites breakfasts to make is German pancakes. Actually…it’s really just one giant pancake that you cut up and share, but calling it a German pancake (singular) just sounds weird to me.
I typically make these on holidays and special occasions (like the rare Portland snow day!), but really they’re so easy to make they could be made any time. I just made them and posted them on my Instagramย last week during our snow day (AKA “carbageddon”- named by a friend who understands the dangerous lure of snow days and comfort foods) and had a request for the recipe, so I thought I’d share!
INGREDIENTS:
* 1 cup four
* 1 cup milk (we use whole milk since that’s what we already buy, but you could use something with less fat too)
* 3 tablespoons sugar
* 1/4 teaspoon salt
* 3 eggs
* 2 teaspoons butter
* powdered sugar
* 1 lemon
* a cast iron pan (I think ours is a 12″)
DIRECTIONS:
* Preheat oven to 425 degrees.
* Measure and pour the flour into a large bowl – set aside.
* In a medium bowl combine milk, sugar, salt and eggs and stir together.
* Add the milk mixture to the flour mixture and blend the two together.
* Melt butter in the cast iron pan and then pour the pancake batter into the pan.
* Bake for approximately 15 – 20 minutes (depending on your oven). Ours usually cooks quicker. You’ll know it’s done when it starts to puff up above the sides of the pan.
* Serve with powdered sugar and a drizzle of lemon juice on top – both to taste.
* Enjoy!
